How to Brew Mojito Green Tea
Brewing follows the approach of Japanese green teas: soft or filtered water heated to between 70 and 80°C, never boiling. Water that is too hot will scorch the Sencha leaves and draw out unnecessary bitterness.
Use 12 to 15 g of leaves per litre, roughly a heaped tablespoon for a 500 ml teapot. Steep for 2 to 3 minutes, no longer: peppermint and lime release their essential oils quickly, and a longer infusion can make the cup taste overly vegetal.
Iced version (homemade mojito tea): use the same quantity of leaves in one litre of cold water, place in the fridge for 4 to 6 hours, then strain.
