Yankou's aromatic profile

Open the tin and the fragrance greets you immediately: a soft, almost candied floral and fruity bouquet. Rose leads the way, followed by a trail of ripe red berries that calls to mind crushed raspberry and wild strawberry.

In the cup, the top note remains floral and velvety. The rose unfolds without heaviness, supported by the fresh, herbaceous character of the Sencha. The first sip is delicate and fragrant, evoking a garden at the close of spring.

The heart note reveals the date. Its natural sweetness adds roundness and depth, like a quiet sweetness woven through the leaf. Aromas of raspberry and blackcurrant give the blend a juicy, fruited dimension, while strawberry lingers on the palate.

In the base note, the everlasting flower releases a subtle, almost amber-tinted honey scent that balances the red berry character. The finish is clean, lightly vegetal, leaving a gentle memory of petals and candied fruit.

How to brew Yankou green tea

Getting the best from a flavoured Sencha comes down to a few simple steps. To reveal Yankou's full aromatic range, pay attention to four key parameters: water, quantity, temperature and steeping time.

Water. Choose a low-mineral, lightly filtered water. Spring water or filtered tap water will honour the delicacy of the floral aromas and preserve the golden colour of the liquor.

Quantity. Use 12 to 15 grams of leaves per litre, roughly two heaped teaspoons for a 500 ml teapot. The blend contains generous pieces of date: scoop a balanced mix of leaves, fruit and flowers for each infusion.

Temperature. Heat the water to between 70 and 80°C. Too hot, and it will scorch the Sencha, releasing a metallic bitterness that overpowers the rose and date. A variable-temperature kettle is ideal; otherwise, let freshly boiled water rest for two to three minutes before pouring.

Steeping time. Allow 2 to 3 minutes. Longer and the Sencha turns astringent; shorter and the red berry notes won't fully open. Strain and drink straight away, while the aromas are at their peak.
