How to Prepare Yangtze Green Tea
Preparation determines the entire balance of this infusion. Sencha is a delicate green tea that does not tolerate boiling water: too hot, and it will draw out an unpleasant bitterness and overwhelm the citrus notes.
The T&T method:
- Water: low-mineral, freshly brought to a simmer then cooled to 75-80°C
- Quantity: 12 to 15 g per litre, roughly one heaped teaspoon per cup
- Steeping time: 2 to 3 minutes, no longer
- Accessories: glass or porcelain teapot, wide-mesh filter to let the leaves fully open
Pour the water over the leaves, steep without stirring, then strain immediately. For a particularly good iced version, cold-steep for 4 to 6 hours in the fridge using the same quantity: the lemon brightness and Sencha sweetness come beautifully to the fore.
