How to brew the date, fig and lemon black tea
To bring out the full aroma of this organic blend, four things matter: water quality, the right dose, temperature and steeping time.
Water: choose a low-mineral water, freshly drawn and brought to 100°C. Hard water can mask the delicate notes of the lemon and fig.
Dose: use 12 to 15 g per litre, roughly a heaped teaspoon for a generous 250 ml cup. The fruit pieces take up volume, so don't be too sparing.
Steeping time: steep for 3 to 5 minutes. Three minutes for a brighter, zestier cup; five minutes to draw out the honeyed roundness of the date and fig. Beyond that, the Assam may begin to turn bitter.
