At a glance: A cherry herbal infusion with indulgent notes of apple, grape and pineapple, rounded out with real cherry pieces and safflower petals. Brewing guide: 100°C, 10 to 12 minutes, 12 to 15 g per liter. Caffeine-free, delicious hot or iced.

Imagine the first bite of a freshly baked cherry cake, with its golden crust, tender fruit and that sweet, warm scent filling the kitchen. Our Cherry Cake herbal infusion was crafted to bring that exact feeling to your cup, with no added sugar and no caffeine.

This blend belongs to our family of indulgent herbal infusions, the ones that turn a simple break into a moment of pleasure. It's equally at home after a long day at the office or following a quiet dinner, whether in a steaming mug or poured over ice. Julien Huot, founder of Thés & Traditions, personally selected every ingredient in this blend to strike the right balance between fruity roundness, gentle acidity and a lingering finish.

Think of this infusion as a comforting interlude, somewhere between a childhood memory and a slice of artisan pastry. Not overly sweet, never heavy, just the generosity of a truly fruit-filled cup.

The aromatic profile of our Cherry Cake herbal infusion

The moment you open the pouch, the aroma is generous and immediate. Cherry leads the way, juicy and gently candied, followed by the round tartness of apple and a tropical hint of pineapple. This trio defines the aromatic identity of the blend.

Once brewed, the liquor takes on a beautiful rosy hue, almost garnet, thanks to the beetroot and rosehip. That appetizing color already hints at the richness in the cup. Safflower petals add a delicate floral note that balances the fruit-forward character.

Top notes: juicy cherry, candied pineapple, stewed fruits.

Heart notes: crisp apple, luscious grape, pastry warmth.

Base notes: lightly tart rosehip, sweet beetroot, safflower petals.

On the palate, the first sip surprises with its naturally rounded sweetness, no sugar added on the infusion side. Cherry (3% of the blend) takes center stage, supported by the richness of apple and grape. Pineapple brings a bright fruity lift that keeps the cup feeling light and vibrant.

The finish is long, gently tart from the rosehip, and leaves a pleasantly fresh, fruity impression. If you enjoy this style of indulgent, tangy blends, try our strawberry raspberry herbal infusion.

A recipe designed like a liquid pastry

This blend was conceived as a true infused pastry. Each ingredient plays a precise role in building the final flavor, with no single element overpowering the others.

  • Apple: the base ingredient, providing the blend's rounded, mellow and gently tart foundation. It evokes the soft texture of cake crumb.
  • Grape: lightly coated with vegetable oil to preserve its softness, it contributes a natural sweetness that stands in for sugar.
  • Candied pineapple: subtly sweet, it calls to mind the cooked fruit in a homemade tart.
  • Rosehip: these wild rose berries bring a fine acidity and a rosy blush to the liquor.
  • Beetroot: it deepens the red-garnet color of the infusion and softens the overall profile.
  • Cherry (3%): real fruit pieces that define the cherry character of the blend.
  • Safflower petals: these yellow-orange petals add a delicate floral note and make the loose-leaf blend visually beautiful.
  • Natural flavoring: it reinforces and anchors the cherry note from the first sip to the finish.

Altogether, this caffeine-free blend is naturally fruity and suited to any moment of the day or evening. To compare profiles and find your favorite, our herbal infusion guide is the best place to start.

How to brew our Cherry Cake herbal infusion

Brewing is straightforward, but a few details make the difference between a decent cup and a memorable one. This infusion needs hot water and a longer steeping time to release its full fruity richness.

Water: bring a low-mineral or filtered water to a gentle boil. Highly calcareous water can flatten the fruity notes and cloud the liquor.

Temperature: 100°C, meaning just as the water comes to a rolling boil. Unlike green teas, this fruit infusion needs fully boiling water to properly rehydrate the dried fruit pieces and unlock their aroma.

Amount: use 12 to 15 g per liter, roughly 2 heaped tablespoons for a 50 cl teapot. This generous dosage is necessary because the fruit pieces are dense and need volume to fully express their flavor.

Steeping time: 10 to 12 minutes. Yes, it's long, but it's essential. Dried fruits only release their sugars and aromas after several minutes of sustained contact with hot water. At 5 minutes, the cup is still timid. At 10 minutes, it becomes full, rich and truly indulgent.

Equipment: opt for a glass or porcelain teapot with a large permanent filter. The fruit pieces need room to expand freely in the water. Avoid narrow tea balls that compress the blend.

The iced version of our cherry infusion

This herbal infusion takes on a second personality when served cold, perfect in summer or as a non-alcoholic drink at the table. Two methods, depending on how much time you have.

Quick method: brew as usual (100°C, 10 minutes, 15 g per liter), let it cool slightly, then pour over a large glass of ice. The liquor turns a beautiful, appetizing rosy pink.

Cold-brew method: place 15 g of the blend in 1 liter of cold filtered water, cover and leave to steep for 8 to 12 hours in the refrigerator. The result is more delicate and less tart, ideal for sensitive palates. You might also enjoy our iced raspberry herbal infusion, designed specifically for cold brewing.

Serve with a few fresh mint leaves, a slice of lime, or a drizzle of elderflower syrup to turn this infusion into a festive drink. For more iced options in the same fruity, colorful vein, try our blood orange and pomegranate herbal infusion.

Storing your loose-leaf herbal infusion

This blend contains dried fruit pieces that are sensitive to moisture and light. Proper storage preserves the richness of its aroma for many months.

Packed in our workshop, it keeps best in an airtight, opaque container, away from light, heat and strong odors. Avoid the refrigerator: moisture is the enemy of dried fruit and can cause a rapid loss of aroma.

Once opened, enjoy the blend within 12 months for the best aromatic freshness. Beyond that, it remains safe to drink but gradually loses its fruity intensity. Check the best-before date on the packaging.
