How to prepare Funky Kiwi

Heat water to 100°C (212°F) (just boiling). Use 15 to 20 g per litre, roughly a heaped tablespoon per cup. Pour the water over the fruit pieces and steep for 7 to 10 minutes.

For an iced version, double the amount, brew hot, then pour over ice. Add a fresh mint leaf, a squeeze of lime, and your drink becomes a vibrant alcohol-free cocktail.

Storing your herbal infusion

Keep the blend in an airtight container, away from light, heat and moisture. The fruit pieces will retain their full aroma and beautiful golden colour for several months.
