The aromatic profile of Peach Passion White Tea

In the cup, the infusion reveals a pale, lightly golden liquor, almost luminous. The rising aroma immediately conjures a summer orchard: ripe peach picked straight from the tree, freshly sliced pineapple, the sweet flesh of papaya.

On the first sip, Pai Mu Tan offers a cottony, almost creamy roundness that gently envelops the palate. This lightly oxidised white leaf retains a delicate vegetal quality, leaving a natural sweetness in the mouth with no trace of astringency.

How to brew Peach Passion White Tea

This fruity tea calls for water that is warm, never boiling. Water that is too hot will scorch the white leaf and flatten the aromas, stripping away the velvety roundness that makes Pai Mu Tan so appealing.

Choose a low-mineral water, filtered if possible. Water quality has a direct influence on the finesse of the cup: hard water masks the subtler fruit notes, while soft water allows them to express themselves fully.

The four key parameters

  • Steeping time: 1 to 3 minutes. One minute for a light, floral cup; three minutes for a fuller, fruitier infusion.
  • Quantity: 12 to 15 grams per litre, roughly a heaped tablespoon for 300ml of water.
  • Vessel: a glass or porcelain teapot, which absorbs no aromas and lets you admire the golden colour of the brew.

Pour the water once it has come to a simmer and cooled slightly over the leaves, cover the teapot, and leave to steep without stirring. Adjust the steeping time to your taste: shorter for a refined morning cup, longer for a more indulgent afternoon pause.

Good news: Pai Mu Tan holds up beautifully to two or three successive infusions. Once the leaves have opened, each steep reveals a slightly different character, softer and more vegetal. This is one of the most rewarding qualities of this tea family.
