The aromatic profile of Mashu

Mashu is built like a fragrance, in three distinct moments. The first sip releases bergamot, fresh and zesty, with a gentle trail of sweet orange. This is the heart of the blend, what connects it to the great family of citrus teas.

At its core, mango brings an exotic, almost creamy roundness that plays beautifully against the brightness of the Sencha. Rose petals add a touch of floral elegance, while marigold and cornflower illuminate the blend visually and carry a delicately honeyed note.

In the finish, the organic Sencha unfolds its clean, grassy freshness, and the Pai Mu Tan, that most refined of white teas, rounds everything out with a silky smoothness. The cup, clear and golden, stays lively from first sip to last, with no bitterness.

How to brew Mashu green tea

A good bergamot green tea comes down to three variables: temperature, time and dosage. Like any flavoured Sencha, Mashu calls for gently cooled water to preserve its citrus freshness and avoid any astringency.

Water: use soft, low-mineral water heated to 75-80°C. Water that is too hot will scorch the leaves and flatten the cup.

Dosage: use 12 to 15 g per litre, roughly a heaped tablespoon for a 500 ml teapot. Adjust to taste.

Time: steep for 2 to 3 minutes, no longer. Sencha releases its freshness quickly; beyond that, the vegetal character becomes too pronounced.

Accessories: choose a teapot with a wide-mesh filter or a generously sized tea infuser, so the whole leaves and petals can open fully and move freely in the water.
