How to brew this mint green tea
Preparation makes all the difference. Sencha is a delicate green tea that calls for low-mineral water and, above all, water that is not boiling. Water that is too hot draws out the tannins and introduces an unwanted bitterness.
Our recommended parameters: 12 to 15 g of leaves per litre, water at 70-80°C (160-175°F), steeping time 2 to 3 minutes. Cover your teapot during steeping to preserve the volatile aromas of the mint.
For a cold brew, use 15 g of leaves per litre of filtered cold water and leave to infuse for 6 to 8 hours in the refrigerator. The result is a smooth, bitter-free drink, perfect for summer. A simple recipe, best served with a few fresh mint leaves.
