The aromatic profile of Bonne Humeur tea

Getting this fruity Sencha just right comes down to three simple things: water temperature, steeping time and dosage. Three benchmarks are all you need to unlock the full aromatic range of this blend.

The water: heat soft, low-mineral water to 70 to 80°C. Any hotter and the Sencha releases too much bitterness, masking the delicacy of the fruit. If you don't have a temperature-controlled kettle, bring the water to a gentle simmer, then let it rest for two to three minutes.

The dosage: use 12 to 15 g per litre, roughly a heaped tablespoon for a large teapot. This generous measure allows the papaya, pineapple and flower petals to fully contribute to the cup's profile.

The time: steep for 2 to 3 minutes, then strain the leaves to preserve the freshness of the liquor. Steeping longer won't improve anything: the Sencha would turn astringent and overwhelm the fruity aromas.
