The Korean tea South Korea Green Op is traditionally prepared in South Korea following the Ku-Jung-Ku-Po method: roasting nine times, then rubbing nine times to extract as many tannins as possible from the leaves. Even today, South Korea has a unique way of preparing tea. The result is visible and can be smelled: the small hand-rolled leaves contain all the plant's aromas.

Korean green tea remains rare in France, as a large part of its production is consumed in its country of origin.
In Korea, tea cultivation is mainly done on Jeju Island. After the leaf harvest, they are either steam-bathed, like Japanese Sencha, or roasted at high temperature, as in China.
The method used influences the taste of green teas. With steam, the tea has a flavor similar to Japanese Sencha, meaning mild and fresh. As for roasted tea, it is deeper and fruity, with roasted notes while remaining delicate.
Finally, a last Korean practice called Gu Jung Gu Po consists of roasting and rolling the leaves nine times. This removes the tannin contained in the tea, for an even more umami flavor. This is the method used for our organic Korean green tea.
