The aromatic profile of Gaohunao
This premium blend reveals its character in three successive stages, like a sensory score that unfolds with every sip. Each ingredient brings its own colour without ever overshadowing the others.
On the attack, lemongrass releases its bright, zesty citrus notes. This citrusy freshness stretches across the clean, vegetal backbone of Sencha, which makes up 47% of the blend. The palate immediately perceives a tangy, lightly sweet vivacity, reminiscent of a fresh lemon syrup.
In the heart, elderflower takes centre stage with its characteristically gentle floral sweetness. It enters into dialogue with raspberry, goji berry and amaranth (6%), creating a delicate fruity roundness. Aronia and cranberry bring a touch of tannin that gives structure to the whole.
On the finish, Gunpowder reveals its woody depth, underpinned by the mineral notes of Green Putharjhora and the subtle presence of Mao Feng white tea. How to prepare Gaohunao green tea
Brewing this blend calls for a little care to bring out the richness of its ingredients without stressing the Sencha, which is sensitive to excessive heat. Here is the official method from our house.
The water: use a low-mineral water, ideally filtered. Hard water would mask the citrus and floral notes. Heat it to 75-80°C, never boiling: above that, Sencha turns bitter and elderflower loses its delicacy.
The quantity: allow 12 to 15 grams per litre, roughly a heaped tablespoon for 300 ml. This generous measure lets the red berries and lemongrass express their full character without diluting the green tea base.
The time: steep for 2 to 3 minutes. A shorter infusion gives a more floral, tender cup; a longer one brings out the briskness of the Gunpowder and guarana. Adjust to suit your own taste.
The accessories: opt for a glass or porcelain teapot with a filter wide enough to let the leaves and flowers fully open. Narrow tea balls are not suited to this blend, which contains voluminous ingredients.
For a summer version, this blend lends itself beautifully to cold brewing: 15 grams per litre of cold water, left in the refrigerator for 6 to 8 hours. The result is a refreshing drink, naturally sweetened by the fruit, with no added syrup. An elegant alternative to commercial sodas and sugary drinks.
