The flavour profile of Japanese Cherry Green Tea
It all starts with the base: a China Sencha, a green tea with long, even leaves in a deep, rich shade of green. When brewed, it yields a clear, golden liquor with a lightly vegetal quality and the bright freshness that is the hallmark of Sencha.

How to brew Japanese Cherry Green Tea
Preparation makes all the difference. A flavoured Sencha calls for water that is not too hot, to preserve its vegetal freshness and let the fruity aroma bloom without any bitterness.
Water: filtered, low in minerals. Highly calcareous water will dull the delicacy of the cherry.
Temperature: between 70 and 80°C. Beyond that, the Sencha releases bitter notes and the cherry fades. If you do not have a temperature-controlled kettle, bring the water to a boil then wait 2 minutes before pouring.
Quantity: 12 to 15 g per litre, roughly 2 heaped teaspoons for 500 ml. For a single cup, use one level teaspoon.
Steeping time: 2 to 3 minutes. No longer: Sencha leaves are lively, and the infusion opens up quickly. Taste after 2 minutes and adjust to your preference.
