How to brew strawberry basil green tea
Brewing makes all the difference. This flavoured Sencha calls for temperature-controlled water to preserve the delicacy of the basil and the roundness of the strawberry.
- Water: filtered, low in minerals, heated to 70-80°C (never boiling)
- Quantity: 12 to 15 g per litre, roughly a heaped tablespoon per cup
- Steeping time: 2 to 3 minutes, no longer
- Equipment: a teapot with a wide-mesh filter or a well-opened tea infuser, so the strawberry pieces and basil leaves can fully open up
Water that's too hot will scorch the Sencha and bring out unwanted bitterness. Too long in the cup and the basil's vibrancy will fade. Keep an eye on the timer: one, two, three minutes, and it's ready.
Iced version: double the quantity, brew hot for 3 minutes, then pour over ice. The result is a sublime summer iced tea, best enjoyed as it is or with a slice of fresh lemon. Perfect morning or evening, the moderate caffeine in Sencha keeps things pleasantly light.

Storage
Blended and packed in our workshop, this tea keeps best in its original tin, tightly sealed, away from light, moisture and strong odours. The Sencha leaves and basil will hold their fragrance for 18 to 24 months after opening.
Avoid storing the tin near spices, coffee or scented products: tea readily absorbs the aromas around it. A dry shelf at room temperature is all you need.
