How to brew roasted walnut green tea

Brewing makes all the difference. Sencha steeped in water that's too hot loses its smoothness and turns bitter; treated with care, it reveals an elegant roundness instead. Here are the house guidelines.

  • Quantity: 12 to 15 g per litre, roughly 2 heaped teaspoons for a large cup.
  • Temperature: 70 to 80°C. No higher. If your kettle doesn't have a temperature setting, bring the water to a gentle simmer then leave it to cool for 3 to 4 minutes.
  • Steeping time: 2 to 3 minutes. Taste at 2 minutes and steep a little longer if you prefer a fuller flavour.
  • Water: filtered or low-mineral water, so nothing masks the delicate notes of the nuts.
