How to brew the Alpine Herbal Infusion
A great infusion comes down to four simple things: water quality, temperature, time and quantity. For this mountain creation, here are our house guidelines.
Water: choose a soft, low-mineral water to let the botanicals shine. Bring it to a full 100°C to properly extract the ginger and orange peel.
Quantity: use 15 to 20 grams per litre, roughly a heaped tablespoon for a large 300 ml cup. This generous measure allows roots, peels and leaves to reveal their full aromatic range.
Steeping time: steep for 10 to 12 minutes. This gives roots and peels time to release their richness, while mint and verbena settle their freshness on the surface.
Enjoy it as it is, or add a drizzle of mountain honey to bring out its roundness. In summer, try it as a cold infusion: leave the botanicals to steep overnight in a jug in the fridge for a crystal-clear, refreshing drink.
