Use 15 to 20 g of botanicals per litre of water, just at a rolling boil (212°F / 100°C). Steep for 7 to 10 minutes depending on the strength you prefer, then strain gently. Chamomile and mint release their aromas gradually, while cinnamon and liquorice root need a few extra minutes to fully express themselves.
