On the palate, the liquor reveals a fresh, fruity heart. Lemon myrtle brings a bright, zesty lift reminiscent of verbena and lime, while elderflower and cornflower add a delicate floral sweetness.

How to brew blueberry ginger Rooibos
A good brew comes down to four things: water, dose, time and temperature. Rooibos is forgiving by nature and won't turn bitter, even with a long steep.
- Water: low-mineral, just off the boil.
- Temperature: 100°C.
- Dose: 15 to 20 g per litre, roughly 2 teaspoons per cup.
- Time: 7 to 10 minutes, depending on how strong you like it.
For an iced version, double the dose, steep for 10 minutes in hot water, then pour over ice. The blueberry and ginger come alive in a chilled drink, making it a lovely choice on a summer afternoon.
