Preparation is straightforward, but a few small details make all the difference. Use 15 to 20 g of loose-leaf per litre of water, roughly a heaped tablespoon per 250 ml cup. This generous measure lets the ginger and lemongrass aromas express themselves fully.

Bring the water to a full boil, 100°C. Unlike green or white teas, Rooibos handles boiling water beautifully, and in fact needs it to unlock its aromatic compounds. Filtered, low-mineral water will bring out the delicacy of the lemon more clearly.
