The Flavour Profile of Rooibos Enchanted Night

On opening the packet, the nose is greeted first by warm cinnamon and baked apple, like a tart fresh from the oven. Then comes the sweet roundness of pumpkin, almost caramelised, alongside the pleasantly surprising crunch note of popcorn.

Top notes: crushed cinnamon, roasted apple, golden popcorn. The opening is indulgent and immediately comforting, carrying that scent of an autumn bakery that stirs memories of childhood afternoon snacks.

How to Brew Rooibos Enchanted Night

One of the great joys of this plant is its forgiving nature: unlike green tea, it never turns bitter, even with a long steep. Here are the brewing guidelines recommended by our house to bring this autumn blend fully to life.

Water: bring a low-mineral water to a full boil, 100°C. Heavily calcified water would mask the delicacy of the apple and pomegranate aromas and weigh down the finish in the cup.

Dose: use 12 to 15 grams per litre, roughly a heaped tablespoon for a large 300 ml cup. The blend contains generous pieces (pumpkin, apple, sugar stars), so measuring by spoon gives the best result. For a fuller cup, go up to 15 g/L without hesitation.

Time: steep for 7 to 10 minutes. At 7 minutes, the cup is delicate and fruity, led by apple and pomegranate. At 10 minutes, it becomes more enveloping, with a real presence of cinnamon and walnut on the finish, perfect for cool evenings.

Straining: use a large filter or fine-mesh infuser so the ingredients have room to open up. A tea ball that is too small would stifle the pieces and hold back the natural diffusion of pumpkin and cinnamon aromas.

For an indulgent twist: add a splash of plant-based milk (oat or almond) at the end of steeping to turn the cup into a liquid dessert.
