How to brew this Almond Chocolate Oolong

Brewing makes all the difference with a flavoured oolong. Water that is too hot scorches the aromas; too cool, and it fails to draw out the cocoa's roundness. Here are the brewing parameters recommended by the house.

  • Water temperature: 80°C (175°F). Use low-mineral, fresh water brought to a gentle simmer, then allowed to cool slightly.
  • Brewing time: 3 to 5 minutes. Start at 3 minutes for a delicate, floral cup; extend to 5 minutes for a more chocolatey result.
  • Quantity: 12 to 15 g per litre, or roughly 2 heaped teaspoons for a 500 ml teapot.
  • Teapot: choose a porcelain or glass teapot, which retains no aromas and allows the leaves to fully unfurl.
