The Wushi aroma profile

In the heart, peach takes over with a velvety roundness. It softens the vivacity of the pineapple and settles into something richly fruity and natural, without ever tipping into candied sweetness.

How to brew Wushi green tea
A great cup comes down to four simple things: low-mineral water, a controlled temperature, the right amount of leaf and a short steep.
The water: use filtered or still spring water with low mineral content, so the natural fruit aromas and the delicacy of the leaves can fully shine through.
The temperature: heat the water to between 70 and 80°C. Any hotter and the green tea turns bitter, with the fruity notes fading away. If you don't have a temperature-controlled kettle, bring the water to a simmer then let it rest for 2 minutes before pouring.
The dose: use 12 to 15 g per litre, roughly a heaped tablespoon for a 500 ml teapot. A generous measure fully opens up the pineapple-peach profile.
The time: steep for 2 to 3 minutes, no longer. Strain the leaves straight away to keep the balance just right.
