This blend calls for careful attention to temperature: water that is too hot will scorch the delicate Sencha leaves and draw out an unpleasant bitterness. The golden rule: cool the water, measure carefully, time precisely.
The 4 key parameters:
- Water: a low-mineral spring water, brought to a near-boil then left to cool to 75-80°C (about 2 minutes off the heat).
- Quantity: 12 to 15 grams per litre, roughly a heaped teaspoon for a 250ml cup.
- Steeping time: 2 to 3 minutes, no longer. The Matcha powder infuses quickly, and over-steeping will make the cup excessively dense.
- Equipment: a porcelain or enamelled cast-iron teapot, and a fine-mesh strainer (since Matcha is powdery, a wide-mesh filter will let particles through).
For the best experience, give the teapot a gentle swirl before pouring: the Matcha powder tends to settle at the bottom. The liquor should take on a soft, slightly opaque green hue, a sign that the two teas have fully merged.
