How to prepare Iced Mango Green Tea

Hot version: heat soft, low-mineral water to 70-80°C. Use 12 to 15 g per litre, roughly one heaped tablespoon for a large teapot. Steep for 2 to 3 minutes, no longer, to preserve the delicacy of the Sencha and keep any bitterness at bay.

Iced tea version (hot brew): follow the recipe above, strain carefully, allow to cool slightly, then pour over ice cubes in a tall glass. Add a slice of lemon, a few fresh mint leaves and, if you like, a drizzle of agave syrup rather than regular sugar.

Cold brew version: place the same amount of leaves in a jug of cold water and leave to steep for 4 to 6 hours in the fridge. The result is smoother and completely free of bitterness, ideal for the hottest days of summer.
