How to brew this thyme and rosemary infusion

To bring out all the flavours of this aromatic blend, use 15 to 20 grams of herbs per litre of water, roughly one heaped tablespoon for a large mug.

Bring the water to a full 100°C. Pour it directly over the herbs and cinnamon sticks placed in a filter teapot or a wide tea infuser, giving the plants room to open and unfurl.

Steep for 5 to 10 minutes, depending on your preferred intensity. A shorter steep (5 min) gives a lighter, citrus-forward cup; a longer steep (10 min) draws out the herbaceous depth of thyme and rosemary.

Best enjoyed as is, without sugar, to appreciate the subtlety of the blend. A spoonful of mild honey (acacia or orange blossom) pairs beautifully with the lemon and lavender notes. In summer, let the infusion cool and serve it over ice with a twist of citrus zest.
