How to brew the Raspberry Caramel infusion
A few simple steps are all it takes to bring out the full aromatic range of this blend. The generous nature of the ingredients (apple, rosehip, popcorn) calls for a fairly liberal dose and a longer steeping time than a classic tea.
Water: bring lightly mineralised, ideally filtered water to a gentle boil. Heavily calcified water can dull the delicate raspberry and caramel notes, which deserve to shine in all their aromatic subtlety.
Temperature: 100°C. Unlike green teas, which call for cooler water, this infusion not only tolerates but benefits from a full boil, drawing out the full depth of the dried fruits and botanicals in the blend.
