How to prepare the Peach Melba herbal infusion
To bring out the full aromatic range of this infusion, use 12 to 15 g per litre of water at a rolling boil (100°C / 212°F). Steep for 10 to 12 minutes, covered, so the fruit pieces can fully release their aromas.
A glass teapot or a large fine-mesh filter works beautifully, giving the fruit pieces room to open up freely. A filter rest lets you extend the steep if you prefer a more intense cup.
Strain and enjoy as it is, without sugar: the cup is naturally sweet and satisfying. You can also add a touch of acacia honey for those who enjoy a sweeter note, or a sliver of vanilla to echo the spirit of the original Peach Melba.
