Built on a base of natural red tea, we've composed an indulgent blend that evokes a classic French pastry: melting apple, butter, caramelised sugar. A creation made for those who love to end a meal on a sweet note, without reaching for dessert.

The aromatic profile of tarte tatin rooibos

This indulgent rooibos unfolds in three stages. Up front, pieces of apple release a fruity, lightly tangy note, almost crisp. Caraway adds a barely-there spiced touch that gently holds the blend together.

At the heart, artisan caramel takes over. Made with sugar, glucose syrup, cream, butter and Guérande sea salt, it brings a buttery roundness and a lingering finish that calls to mind a genuine tarte tatin. It's this caramel signature that gives the blend its immediate generosity.

In the background, the rooibos base unfolds its naturally woody and sweet notes, complemented by moringa leaves that add a delicate green quality. The result is a smooth, indulgent cup with no bitterness whatsoever.

How to brew tarte tatin rooibos

Rooibos is one of the most forgiving infusions there is: it never turns bitter, even if you leave it to steep a little longer. That's what makes it so versatile, from the first cup of the morning to the last of the evening.

Classic hot brew: bring low-mineral water to 100°C (212°F). Use 12 to 15 grams of leaves per litre, roughly a heaped tablespoon for a 250 ml cup. Steep for 7 to 10 minutes.

Iced version: brew a slightly stronger hot infusion, let it cool, then pour over ice. A few slices of fresh apple make a wonderful addition, echoing the blend's aromatic profile beautifully.

Food pairing: this infusion pairs wonderfully with a butter shortbread, a warm compote or a scoop of vanilla ice cream.
