How to brew Suzhou green tea
Brewing a scented tea calls for a little care to preserve the delicacy of its aromas. Water that is too hot will scorch the leaves and mask the blend's fruity refinement.
Use 12 to 15 g of leaves per litre of water, roughly one heaped teaspoon per cup. Heat low-mineral water to 70-80°C, then steep for 2 to 3 minutes.
