How to brew the coconut mango herbal infusion

Brewing is simple and forgiving: this infusion holds up beautifully to a long steep, with no bitterness or astringency.

  • Quantity: 2 to 2.5 g per cup (about 1 heaped tablespoon)
  • Water: freshly boiled, at 100°C
  • Steeping time: 10 to 12 minutes
  • Volume: 250 ml per cup

For a perfect iced version in summer, double the quantity, steep for 12 minutes in hot water, strain, then pour over ice. You can also cold-brew it: use 8 g per litre and leave it in the fridge for 4 to 6 hours for a naturally fruity, refreshing drink.
