First sip: lemon bursts through cleanly, fresh and almost zesty, carried by the lemongrass and natural citrus aromas. The cup opens on a bright, sun-filled vivacity that wakes the palate from the very first moment.
Then comes the heart of the infusion, rounder and more fruited. Peach and passion fruit bring a juicy, lightly sweet flesh, naturally so, with no need for added sugar. Papaya extends this pleasantly indulgent sensation, soft and almost sun-warmed.
In the background, the rooibos unfolds its characteristic woody notes, supported by the vegetal depth of green yerba mate and the refinement of China Sencha green tea (11%). This infusion lends itself to a simple preparation that anyone can master. Four things to keep in mind to fully release its aromas: the water, the dose, the temperature, and the time.
The water: choose filtered or low-mineral water. Heavily chalky water masks the delicacy of the fruited notes and weighs the cup down.
The dose: use 12 to 15 grams of blend per litre of water, roughly one heaped tablespoon per 250 ml. Adjust to taste: a little less for a lighter morning cup, a little more for a more expressive brew.
The temperature: bring the water to a full boil at 100°C (212°F). Unlike more delicate green teas, rooibos and its companion plants handle boiling water beautifully, which helps release their aromas fully.
The time: steep for 7 to 10 minutes, depending on how intense you like it. This longer infusion allows the peach and lemon aromas to develop completely, with no bitterness, since rooibos contains none of the astringent tannins found in traditional tea.
Brew as usual, then leave to cool before refrigerating for a few hours. Serve over ice with a slice of lemon and a wedge of fresh peach. For a crowd, double the quantities and pour into a large pitcher to serve at a summer lunch: it never fails to impress.
