We built this recipe around an organic green tea Sencha with tender leaves, rounded out with apple pieces, orange peel and a few rose petals. A flavourful creation, light on the palate, that turns an ordinary break into something worth pausing for.

The flavour profile of vanilla cinnamon green tea

From the moment you open the pouch, the aromas unfold: vanilla wraps around you, cinnamon warms gently, and apple brings a lightly crisp, fruity note. A cosy, almost autumnal fragrance that makes you want to brew straight away.

How to brew vanilla cinnamon green tea

Brewing a great green tea comes down to a few careful details. Water that is too hot scorches the Sencha leaves and brings out bitterness, while a well-timed infusion reveals all the finesse of the blend.

Water: filtered, low in minerals, heated to 80°C (175°F). If you do not have a temperature-controlled kettle, bring water to a boil and let it rest for 2 minutes before pouring over the leaves.

Quantity: 12 to 15 grams per litre, roughly one heaped tablespoon for a 500 ml teapot. Adjust to taste and to the size of your teapot.

Time: 2 to 3 minutes. Beyond that, the Sencha can develop more astringent notes, so keep an eye on the clock to preserve the blend's natural roundness.

Iced preparation: this blend lends itself beautifully to cold brewing. Use 15 g per litre of cold water, leave to steep for 4 to 6 hours in the fridge, strain and serve over ice. The vanilla and apple aromas come through with a surprising freshness, perfect for warmer days.
