How to Brew Sencha Mizuki Japan Green Tea

Brewing a good sencha calls for careful attention to temperature — too hot, and the tannins take over, masking the flavour. Here are the official brewing parameters we recommend for this tea:

  • Water temperature: 80°C (bring water to a boil, then leave to cool for 2 minutes)
  • Brewing time: 1 minute 30 seconds
  • Quantity: 12 g per litre, roughly 2 heaped teaspoons per 300 ml
  • Water: low-mineral, such as Volvic or filtered water

Pour the water gently over the leaves in a cast iron or porcelain teapot. Avoid boiling water: above 85°C, sencha develops an unpleasant bitterness and loses its characteristic umami roundness.

Tasting tip: this sencha holds up beautifully for two infusions. The second, shorter steep (45 seconds) reveals softer, more buttery notes, extending the pleasure of the cup. For a third infusion, extend the time to 2 minutes and raise the temperature slightly.

An Iced Version for Summer
