How to brew pistachio white chocolate Rooibos
Use 12 to 15 grams of leaves per litre of water, roughly a heaped tablespoon for a large mug. Choose a low-mineral water, brought to a full 100°C.
Pour the boiling water over the leaves and steep for 7 to 10 minutes. Unlike tea, rooibos never turns bitter, so you can brew a little longer if you prefer a more intense cup.
For an iced version, double the quantity, brew hot, then pour over ice. The richness of white chocolate and the brightness of pistachio work wonderfully as a summer cold drink.
