How to brew peach apricot rooibos

Brewing comes down to four essentials: water, dose, time, and temperature. A soft, ideally filtered water will bring out the full aromatic finesse of the blend.

Water: bring your water to a full boil, 100°C. Unlike green or white teas, rooibos welcomes boiling water with no bitterness whatsoever.

Dose: use 15 to 20 g per litre, roughly one heaped tablespoon for a 500 ml teapot. Adjust to suit the intensity you prefer.

Time: steep for 7 to 10 minutes. Rooibos never turns bitter, so feel free to brew a little longer if you like a fuller cup.

Accessories: a teapot with a wide-basket infuser or a loose-leaf filter with a drip tray works best, giving the fruit pieces and flowers room to unfurl and release their full aroma.

For an iced version, double the dose, brew hot, then pour over ice. A naturally sweet, refreshing summer drink, with date and fruit doing all the work. Try our rooibos pina colada for an exotic twist.

Storage

Store your peach apricot rooibos in an airtight tin, away from light, moisture, and strong odours. Packed in our own workshop, it will hold its full aromatic character for 18 to 24 months under proper conditions.
