What is ube?

Ube is the star ingredient in purple drinks and desserts that have been trending for several years. Behind this spectacular color is simply an edible root, long used in Asian cuisine.

Ube, a purple root from Asia

Ube is a variety of purple yam, very popular in the Philippines and several Asian countries. Traditionally, it's used as a puree or powder in desserts, ice cream, pies, and now in modern lattes and bubble tea.

In powder form, it becomes a very simple ingredient to use daily: add it to milk, cake batter, or a dessert to achieve that distinctive purple color.

Color & taste: what to expect in your cup?

Mixed into milk or a sweet preparation, ube powder provides a lovely shade ranging from soft lilac to more intense violet, depending on the quantity used.

In terms of taste, we're in a very comforting register: a round sweetness, slightly vanilla-like, sometimes perceived as close to hazelnut or sweet potato, with a touch of indulgence that pairs beautifully with plant-based milks, vanilla, white chocolate, or mango.

Benefits & composition: a clean & indulgent powder

This section answers the essential question: what's really in this bag, and why choose this powder rather than a simple purple coloring.

A short & readable ingredient list

Our ube powder is formulated with a deliberately short ingredient list, easy to understand at first glance. The idea: to offer you a product as pure as possible, putting ube at the heart of the recipe.

Depending on the version chosen, it may be composed solely of purple yam reduced to powder, or combined with a few simple ingredients clearly indicated on the packaging. No “hidden” ingredients, no complicated formulation: you know exactly what you're consuming.

A naturally purple color, without added coloring

The purple color you see in your lattes and desserts comes from the root itself. It's not an added coloring, but the natural hue of ube, revealed when mixed with a liquid or batter.

By slightly adjusting the dosage, you can obtain a range of very soft purples – from a light lilac veil to a deeper violet – while maintaining a harmonious and pleasant taste.

Everyday benefits (fiber, indulgence, caffeine-free*)

Ube is a root naturally rich in fiber, which easily finds its place in a varied and balanced diet. In powder form, it becomes a clever ingredient to color and flavor your drinks and desserts without resorting to artificial flavors.

Another appreciable advantage: ube latte preparation is caffeine-free* (depending on the milk used), making it a gentle alternative to caffeinated drinks, to be enjoyed both during the day and in the evening, for the simple pleasure of an indulgent cup.
*The ube powder itself does not contain caffeine.

Dosage & step-by-step tutorials

Here, the goal is to give you concrete guidelines to succeed with your ube latte, bubble tea, and desserts, without any hassle.

Ube latte for 1 cup: the basic recipe

For a cup of approximately 250 ml, generally count:

  • 2 level teaspoons of ube powder (approximately 5–6 g)
  • 250 ml of milk (dairy or plant-based)
  • Sweetener of choice (honey, syrup, sugar, optional according to your taste)
  1. Pour 2 teaspoons of ube powder into the bottom of your cup.
  2. Add a small amount of hot milk and mix well until you obtain a smooth paste, without lumps.
  3. Complete with the rest of the hot or frothed milk, sweeten if needed, mix, and enjoy.

Ube latte / bubble tea for 1 liter

To prepare 1 liter of ube latte (about 4 large glasses):

  • 8 level teaspoons of ube powder
  • 1 liter of milk
  • Sweetener of choice
  1. In a carafe, mix the ube powder with a little hot milk to dissolve it.
  2. Gradually add the rest of the milk while whisking.
  3. Serve over ice for an iced latte version, or add pre-cooked tapioca pearls for a homemade bubble tea.

You thus obtain a ready-to-serve base, ideal for a shared snack or a colorful brunch.

Dosage for baking & desserts (cakes, creams, ice cream)

In baking, the dosage depends on the type of recipe and the desired color intensity:

  • Pound cake / four-quarts type cake (6–8 servings): 10 to 15 g of ube powder in the batter.
  • Cheesecake or layered desserts: 8 to 12 g for a visually well-defined purple base.
  • Dessert creams, yogurts, homemade ice cream: 1 to 2 teaspoons per serving of approximately 200–250 g.

The idea is to find your balance: add enough powder to achieve a beautiful color and a true flavor signature, while respecting the texture of the base recipe.
