At a glance: Organic Black Golden Snail 1st Grade black tea, a grand cru from Yunnan, crafted from young golden buds hand-rolled into tiny spirals. Brewing: 100°C, 3 to 5 min, 12 to 15 g/L. Notes of honey, wood and a hint of malt.

Among our rare teas and grand crus, the Black Golden Snail 1st Grade holds a singular place. From Yunnan, the historic birthplace of the tea plant, it is made entirely from young golden buds, each one carefully hand-rolled into a delicate spiral that recalls a tiny snail.

Its rarity lies as much in its raw material as in the craft that shapes it. Every golden snail is formed individually, in the pure Chinese tradition, making this one of the most refined and expressive black teas our house has ever selected.

Julien Huot chose this cru for the depth of its cup and its rare balance between honeyed softness and woody character. Explore our other exceptional crus to continue this journey through rare terroirs.

The aromatic profile of Black Golden Snail 1st Grade

Before brewing, the dry leaves make an immediate impression: fine golden needles, almost coppery, rolled into tiny snail-like spirals. This appearance is more than aesthetic — it speaks to patient hand-craftsmanship, the hallmark of a first-grade selection.

On the nose, the promise holds: a warm, honeyed, woody fragrance with a gently malty, cocoa-tinged undertone. It is an enveloping scent, characteristic of Yunnan black teas composed exclusively of buds.

Top notes: golden honey, toasted bread, dried flowers. The first sip is soft and round, with no aggressive astringency — the signature of a first-grade material.

Heart notes: fine wood, blonde malt, a touch of raw cacao. The body of the cup unfolds with roundness, its silky texture a hallmark of bud-rich leaves with their velvety down.

Base notes: a long, gently spiced finish, with nuances of dried fruit and caramel. The retronasal warmth lingers well after the last sip.

The liquor, a deep amber with copper highlights, is clear and luminous. This is a cup that invites you to slow down — perfect for a morning or mid-day moment when you want to savour a grand cru at its purest.

Understanding the grade and rolling technique

The designation "1st Grade" indicates the highest tier of the Chinese classification for this style of tea: whole leaves, golden buds selected one by one, a high proportion of fine down, no broken pieces. It is the most sought-after grade for this style of golden snail.

Hand-rolling into spirals is a skill passed down through generations. Each bud is gently shaped between the palms to form this snail-like curl, which protects the aromas and allows them to release slowly during brewing.

How to brew Black Golden Snail 1st Grade

Brewing a grand cru calls for a little care, but no complicated technique. Four parameters are all you need: water quality, temperature, dose and steeping time.

Water: choose a low-mineral, soft water. Filtered or naturally soft spring water will let the delicate aromas shine. Hard water tends to mask the honeyed and woody nuances in the cup.

Temperature: bring the water to 100°C. Unlike green teas, which call for cooler water, this black tea — made entirely from buds — handles a full boil beautifully, which unlocks its full aromatic range.

Dose: use 12 to 15 g per litre, roughly a heaped tablespoon for a generous 300 ml cup. The golden snails unfurl slowly as they steep, releasing their aromas gradually.

Time: steep for 3 to 5 minutes. Three minutes gives a rounder, more honeyed cup; five minutes produces a fuller-bodied infusion where the woody and malt notes come forward.

Tasting tip: this cru lends itself beautifully to multiple short infusions in the Chinese style, using a small teapot or a gaiwan. The second and third steepings reveal new facets — woodier, sometimes fruitier. This is one of the great pleasures of whole-leaf teas like this one.

For accessories, a porcelain or glass teapot works perfectly, giving the snails room to unfurl. Avoid fine-mesh filters that might restrict their opening.

Storage

Store your golden snails in an airtight container, away from light, heat and strong odours. A dry, cool cupboard is ideal. Well protected, this grand cru will keep for several months without losing the richness of its aromatic bouquet.
