Genmaicha Yukihime: an authentic roasted rice green tea
Our Genmaicha Yukihime, whose name means "brown rice tea", is a traditional blend of green tea (Bancha or Sencha) and roasted wild rice grains. When this recipe is enriched with matcha (powdered green tea) and puffed rice, it takes the name Matcha-Iri Genmaicha. Once brewed, Genmaicha Yukihime develops hazelnut notes from the roasted rice alongside fresh grassy notes from the green tea, pairing beautifully with both sweet and savoury dishes.

Flavour profile
In the cup, the liquor opens to a bright golden yellow. On the nose: toasted rice and roasted hazelnut come first, followed by the fresh, grassy character of the green tea. On the palate, a gentle roasted roundness coats the mouth, with the green tea lending structure and a long, nutty finish. Remarkably approachable and low in astringency, this is an ideal choice for anyone new to Japanese or Chinese green teas.

Like all lightly oxidised green teas, organic Genmaicha Yukihime is naturally rich in catechins, the antioxidant polyphenols characteristic of Camellia sinensis. The roasted rice adds a nourishing, cereal-like quality and a naturally gentle taste. How to brew Genmaicha Yukihime
Preparation follows the same principles as other Japanese green teas and Chinese green teas, with one important detail: because it contains roasted rice, Genmaicha should not be rinsed before brewing, so all that flavour is preserved. It can be enjoyed on its own or with a splash of warm plant-based milk for a delicious latte-style cup.
How much tea per cup?
Use 12 to 15 grams of leaves per litre of water, roughly 3 g for a 250 ml cup (one heaped teaspoon).
Temperature and steeping time
Your roasted rice Genmaicha calls for water at 70 to 80 °C and a steeping time of 2 to 3 minutes. Warm your teapot and cup with hot water beforehand for best results.
When to enjoy Genmaicha Yukihime
Genmaicha is naturally low in caffeine thanks to the presence of rice, making it a pleasure at any hour, including early evening, without disrupting sleep. Its malty, vegetal flavour pairs harmoniously with the briny notes of maki or sushi, and with the sweetness of desserts.
