How to brew Piña Colada Rooibos

A few simple tips will help you get the most out of this generous blend. Unlike green tea, rooibos handles high temperatures and long steeping times with ease, never turning bitter.

Water: bring a low-mineral water to a full boil at 100°C. Filtered water will better preserve the delicate fruit and vanilla aromas.

Dosage: use 15 to 20 g per litre, roughly a heaped tablespoon per 250 ml cup. Since the fruit pieces are quite chunky, don't be shy with the quantity.

Steeping time: infuse for 7 to 10 minutes. Rooibos releases no bitterness, even with a longer steep. The longer you leave it, the more the pineapple and coconut notes bloom.

Equipment: a glass or ceramic teapot with a wide-mesh filter works best, giving the fruit pieces room to unfurl freely. A standard tea ball would be too small for this generous blend.
