Pai Mu Tan: as delicate as a white peony

Produced in southeast China, Pai Mu Tan or Bai Mu Dan white tea originates from the coastal province of Fujian bordering the Taiwan Strait. Its liquor with refined notes hides a secret: a rigorous harvest selecting only the bud and the first two leaves with green and white reflections. Low in caffeine, all white teas can be drunk during the day or even in the evening.

Benefits and virtues of Pai Mu Tan

Like green and black teas, white teas are rich in polyphenols, catechins and antioxidants, tannins, fluoride and flavonoids. How to prepare Pai Mu Tan?

The preparation of organic Pai Mu Tan is similar to that of all other white teas. Unlike black teas, the water must be simmering and not boiling. The leaves have a subtle and delicate taste and do not need to be rinsed. Before brewing, do not hesitate to scald your accessories, teapot and cup.

How much Pai Mu Tan to use?

Measure 12 to 15 grams of organic Pai Mu Tan leaves for 1 liter of water. For one cup, use the equivalent of 1 teaspoon or 3 grams.

What is the ideal brewing temperature for Pai Mu Tan?

Some infusions require boiling water. This is the case for black teas. Others require barely simmering water. This is the case for green, oolong and white teas. The infusion of organic Pai Mu Tan requires water at 70 or 80°C. After 90 seconds to 2 minutes, when the leaves have released their flavor, your infusion is ready.

When to drink Pai Mu Tan?
