This fruity black tea unfolds in three stages, from the first scent to the lingering finish. Each ingredient plays a precise role in the balance of the blend.
On the nose, the natural fragrance of the berries rises as soon as you open the packet. Raspberry and strawberry lead, bright and tangy, carried by the sweet roundness of grape. It's an immediately recognizable scent, generous, almost pastry-like.
At the heart, the Assam takes over. This full-bodied base brings depth, a measured astringency and malty notes that ground the red berries in a genuine cup of black tea. Blackberry, present at 2% in both leaf and flavor form, adds a deeper, almost jam-like nuance.

Water: bring to 100°C, ideally filtered or low in minerals to preserve the delicacy of the natural aromas. Hard water tends to smother the raspberry and redcurrant notes.
Quantity: use 12 to 15 g per liter, roughly one heaped tablespoon for a 50 cl teapot. For a single cup, 2.5 to 3 g is plenty.
Steeping time: 3 to 5 minutes. Three minutes for a fresh, fruity cup; five minutes for a fuller infusion where the Assam really speaks. Beyond that, the tea turns astringent.
