Genmaicha Yukihime: the Chinese green tea with roasted rice

Grown in China, Genmaicha Yukihime takes its name from the Japanese for "brown rice tea". This distinctive blend combines Bancha or Sencha green tea leaves with roasted wild rice grains. When the same recipe is made with matcha (powdered green tea) and puffed rice, it becomes known as Matcha-Iri Genmaicha. Once brewed, Genmaicha Yukihime reveals toasty hazelnut notes from the roasted rice, alongside fresh grassy hints from the green tea — a pairing that works beautifully with both sweet and savoury dishes.

How to prepare Genmaicha Yukihime

Brewing Genmaicha Yukihime follows much the same method as other Japanese green teas or Chinese green teas, with one important detail: because it contains roasted rice, Genmaicha Yukihime should not be rinsed before brewing, so its full flavour is preserved. Depending on your preference, this nutty, warming tea can be enjoyed on its own or with a splash of milk. To keep its character over time, store your Genmaicha Yukihime in an airtight tin or caddy.

How much Genmaicha Yukihime to use

For a well-balanced, aromatic cup, the Chinese tradition calls for 12 to 15 grams of loose-leaf Genmaicha Yukihime per litre of water. For a standard mug, use approximately 3 grams — roughly one heaped teaspoon.

What is the ideal brewing temperature for Genmaicha Yukihime?

A great infusion often comes down to the details. To bring out the full character of your organic Genmaicha Yukihime, use water at 70–80 °C and steep for 2 to 3 minutes. Before brewing, take a moment to warm your teapot and cups with a little hot water first.

When to enjoy Genmaicha Yukihime

Like Oolong or Wulong teas, Genmaicha Yukihime is naturally low in caffeine, which means it can be savoured at any time of day, even in the evening, without affecting your sleep.
