How to brew Céline Cookie green tea
Getting the best from this blend comes down to a careful steep. Sencha is a delicate green tea that cannot stand boiling water, which would turn it bitter and drown the vanilla notes.
Water: low-mineral, filtered if possible, heated to 75-80°C. If you do not have a temperature-controlled kettle, bring the water to a boil then wait 2 minutes before pouring.
Quantity: 12 to 15 grams per litre, roughly a heaped tablespoon for a 50 cl teapot. A glass or porcelain teapot works best, giving the leaves room to open fully.
Time: 2 to 3 minutes. Beyond that, the Sencha tannins start to overshadow the rounded vanilla character. Taste at 2 minutes, then steep a little longer if you prefer more body.
