Picture a cup of pale, almost golden liquor, from which rise notes of freshly picked red fruits and a soft floral breath. Our raspberry white tea was crafted as a gentle pause, equally welcome in the morning or the afternoon.

This blend rests on a rare combination: an organic Pai Mu Tan white tea, silky and delicate, paired with two green teas (Chun Mee and Sencha) that bring a fresh, vegetal foundation. A house signature, designed by Julien Huot.

The aromatic profile of the currant, raspberry and rose white tea

The moment you open the tin, the natural raspberry fragrance greets you, underscored by a bright note of blackcurrant. Rose petals, at 2%, round the blend with an indulgent floral touch.

On the palate, the tasting unfolds in three stages. A juicy, fruity first impression driven by raspberry and aronia. A supple heart where the Pai Mu Tan reveals its cottony softness. A fresh, lightly vegetal finish, courtesy of the Sencha.

The star ingredient is organic raspberry (2%), visible in pieces throughout the blend. It converses with blackcurrant (1%) to evoke currant, that small, translucent red berry with its bright, tangy flavour that lends its name to this creation. Rose petals add an unmistakably romantic dimension.

How to brew the currant, raspberry and rose white tea

White tea calls for gentler water than black tea. Use 12 to 15 grams of leaves per litre, roughly one heaped teaspoon per cup.

Heat a low-mineral spring water, then let it cool slightly before pouring. Our guide on how to brew white tea explains how to preserve the finesse of Pai Mu Tan and the freshness of the natural raspberry aromas. Water that is too hot will scorch the leaves and bring out an unwanted bitterness.

Steep for 2 to 3 minutes, no longer. Strain and enjoy without sugar, to fully appreciate the natural roundness of the blend. This raspberry white tea also lends itself beautifully to a second infusion, with a slightly extended steeping time.

For an iced version, double the leaf quantity and cold-steep for 6 to 8 hours in the refrigerator, then strain. The result is a pale pink, wonderfully refreshing drink, perfect for warm days. Try brewing a whole pitcher to transform your summer afternoons.

Storage

Store your white tea in its original tin, away from light, moisture and strong odours. Seal it well after each use to preserve the natural raspberry and blackcurrant aromas for 18 to 24 months.
