How to Prepare Oolong Jianxin

Oolong is a semi-oxidised tea that rewards a little care in the brewing, which directly shapes the roundness and expression of its fruity notes.

Here are the parameters our house recommends for this blend:

Quantity: 12 to 15 g per litre, roughly 2 heaped teaspoons for a 50 cl teapot.
Temperature: 80°C. Do not exceed this, as higher heat draws too much tannin from the hibiscus.
Steeping time: 2 to 4 minutes, depending on the intensity you prefer. 2 minutes for a light, fruity cup; 4 for a richer, fuller liquor.
Water: low in minerals, ideally filtered, so as not to mask the delicacy of the pomegranate.
