How to prepare ginger lemon green tea

To bring out all the aromas, place the tea leaves in a teapot, tea ball or infuser. Use filtered, low-mineral water. Pour near-boiling water over the leaves and let them steep gently without stirring. This classic approach to green tea ensures a balanced cup where the spice's liveliness, the citrus freshness and the finesse of the Sencha each have their moment. How much per cup?

Use 2 grams per 200 ml, roughly a heaped teaspoon per standard cup. For one liter of water, allow 10 to 12 grams of the blend. Adjust to taste: a more generous measure will give a spicier, tangier brew.

Ideal temperature and steeping time

The ideal water temperature is between 75 and 80°C, never higher. Water that is too hot will amplify bitterness and overpower the citrus freshness. Steep for 2 to 3 minutes, then strain. For a second infusion, slightly increase the steeping time (3 to 4 minutes) with water a little warmer (80°C).
